Bacon-Wrapped Asparagus: A Great Side Dish for Thanksgiving or Anytime!
True confessions right from the top. I’m not a huge veggie girl. But for some reason a lot of people like them…and expect them to be part of a dinner—and maybe even especially a Thanksgiving meal.
This is what put me on the hunt for a veggie side dish I could offer and enjoy myself.
Enter bacon-wrapped asparagus. Whoever came up with this was either a genius or simply a bacon lover like me. (I think bacon makes everything better!) This dish is easy to make and so delectable everyone will be left wondering why they should even bother with the turkey, haha!
Bacon-Wrapped Asparagus Ingredients🥓
🟠Asparagus (medium stalks—too thick and they don’t cook well, too thin and they get overcooked)
🟠Bacon
🟠Some fat to coat asparagus (recommended: coconut oil, lard, butter or coconut oil)
🟠Optional: garlic powder or garlic salt, paprika, or Pluck organ-based seasoning
Steps 🥓
1. Chop off the woody end of the asparagus stalk.
2. Coat the asparagus before wrapping the bacon around it, to hasten its cooking. I recommend using a bit of bacon grease (a natural pairing), lard, butter, or coconut oil if you want a slightly sweeter taste.
3. Option: Feel free to sprinkle asparagus with garlic salt or garlic powder. Paprika could be fun to add spiciness or Pluck (my fave organ-meat spice) for greater nutrient-density. Play around with it and see what you like best each time you make this dish.
4. If the bacon is too wide, cut it lengthwise and wrap the strip around the individual asparagus stalk, barber-pole style, leaving the tip of the asparagus exposed.
5. Place on a wire rack and bake for 15-20 minutes at 400 degrees. Check in on it 5 minutes before they should be done. Flip them around if the bacon is not yet getting crispy and up to a “broil” temp for the last 3-5 minutes to get the right amount of crispiness.
